Where should you store olive oil?

The three causes of spoilage
Technical sources name light, oxygen and temperature (especially swings in temperature) as the main causes of quality loss. Good packaging has to control all three.
Why dark glass?
Glass is inert and gas-tight, but its light protection depends on its colour; clear glass is not recommended scientifically. Dark glass blocks light better.
In your kitchen
Keep the bottle in a dark, cool place away from the stove and sunlight, with the cap closed. Buy the size you will use so it does not stay open for long.
