A working definition
In technical sources, for cold pressing or cold extraction the temperature of the paste and oil should not exceed 27 °C.
The malaxer jacket water should not exceed 45 °C, and malaxation usually lasts about 60 minutes, at most 90.
Why is the word cold not enough?
A five-year comparison of three extraction methods showed that traditional pressing does not necessarily give oil richer in phenolics. What matters is not the name of the method but the recorded temperature and process control.
At Arzima
Arzima processes its olive oil by cold pressing in Taarom. You can ask for the test sheet of each batch.
